Chicken Breast Stuffed with Spinach, Blue Cheese, and Bacon
Ingredients:
4 boneless, skinless chicken breasts
4 slices bacon
1 cup fresh spinach, chopped
1/4 cup blue cheese, crumbled
1/4 cup cream cheese, softened
1 garlic clove, minced
Salt and pepper to taste
Toothpicks for securing
Directions:
Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
In a small bowl, mix together the chopped spinach, blue cheese, cream cheese, and minced garlic. Season with salt and pepper.
Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
Stuff each chicken breast with the spinach and blue cheese mixture, then wrap each stuffed chicken breast with a slice of bacon. Secure with toothpicks.
Heat a skillet over medium-high heat and sear the stuffed chicken breasts for 2-3 minutes on each side, until the bacon is crispy.
Transfer the chicken breasts to the prepared baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Remove from the oven, discard the toothpicks, and let the chicken rest for 5 minutes before serving.
